Pollos El Guero
About This Spot
Stepping into Pollos El Guero feels like entering a warmly lit corner where the heart of Windsor’s Mexican flavors quietly thrives. This is the kind of spot where the bustle slows just enough to savor the simple joy of good food made with care, and the hum of friendly conversation fills the air. It’s a casual local eatery where a sense of ease invites you to settle in, whether you're grabbing a quick bite or lingering for a comforting meal.
The pace here is unpretentious and welcoming — a little slice of everyday life where the focus gently rests on authentic, straightforward dishes that speak for themselves. The aroma of grilled chicken mingles with the scent of freshly fried chips, setting an inviting scene for those looking for familiar yet heartfelt Mexican fare. The open kitchen chatter and cheerful greetings from the staff add to the feeling that you’re not just dining, but sharing a moment with people who take pride in what they do.
Pollos El Guero’s menu offers more than just food; it’s a gateway into flavors that resonate deeply with the community. From tender, smoky chicken that seems to linger in the memory just as much as on the tongue, to street tacos packed with vibrant, carefully layered ingredients, each meal carries the warmth of tradition. There’s a comforting rhythm here — nachos piled high, soft, hand-rolled tortillas, and burritos wrapped with a fresh sense of care that make it clear this isn’t about flash, but about flavor that feels honest and satisfying.
What makes Pollos El Guero truly stand out is the blend of simplicity and genuine connection. The team here greets each guest with a warmth that turns a quick lunch into a moment worth returning for. It’s that feeling — the small kindnesses, the consistent quality, the familiar smiles — that make this a place you want to come back to, time and again.

A friend recommended this place to us and so glad we finally got around to trying it! Such good food, incredibly friendly staff, and super quick! This is our new taco spot- we definitely will be back! *I asked for no onions

Stopped by here because of a reccomendation and I was not disappointed. This is the type of place I've been looking for. Not fancy just a mom and pop shop with food that will make you want to never stop eating. The chicken is simple but so good. I can't explain it , just try it. I can't wait to try more things. But I've been dreaming of the grilled chicken ever since I had it.

This is hands down the best breakfast burritos ive had up north for sure and i have tried over 15 different places in northern colo from greeley to lovealand to foco and this one stand out above the rest. Its not quite a 5 burrito but its pretty close but its very rare to even have a perfect burrito. I guess the only thing i would like better is if the green chili was spicy because im a heakseeker i like spicy food not like hot cheeto spicy im talking about like ghost pepper kind of spice but i still like this burrito but just saying it would bring it over the top if it was spicy. The price was right for a handheld burrito though ive seen double or triple the price but not good at all. Give them a try if you havent already. As with all my reviews i encourage everyone to try the place out whether its good or bad just because we all have different taste and even if it isnt to my liking it could be to yours.

This was my first time here. The al pastor tacos are amazing! The carnitas tacos are very good. Made in-store chips are delicious! We will definitely be back again and again!

I can’t say enough great things about this place. The food, the people, the service is all wonderful. This is my family’s go to spot for Mexican food every time. I love that they offer a handful of different burritos in the morning (I love it even more when I can score one of their steak and bean, red chili pork, or green chili pork burritos) The chicken is a must when you order here. It is so full of flavor!! This is a family owned spot and it’s really reflected in the taste and the friendliness, the food tastes just like home and the people are always sweet, asking you about your day and telling you about theirs. I’m so thankful we found this gem, 11/10 highly recommended

I came here specifically for the chicken wings. However homie. However. I also tried the tacosal pastor as well. These chicken wings took me back. Both simple while also being delicious as well. I like smaller chicken wings and these are a little bit smaller. Next time I want to try the pollo asado. Not enough places have the chicken with sides like this place.
